This coffee was produced in the district of San Antonio, which lies high in Colombias Cordillera Central mountain range in Tolima province. The areas climate, soil, and topography are ideal for coffee production, which provides the regions main source of income (followed by cattle farming). Indeed, the San Antonio districts emblem is made up of two hands holding a coffee bean, representing how important coffee and its farmers are to the local area.
The San Antonio area has been producing coffee for almost a century now, and the majority of its farms have been passed down through the same families for generations. While todays producers proudly uphold traditions inherited from this long history of production, they are also embracing new technologies and production techniques with the aim of producing coffee of the very highest quality.
Most of the farms are small - an average of three hectares, of which around two hectares are coffee (for their names see below). The ripe coffee cherries are picked by hand and transported to the local wet mill. They are then pulped immediately and fermented for 12 or 18 hours, depending on the altitude they were grown at (coffee grown at higher altitude is fermented for longer). After being washed the beans are dried in the sun on raised beds or patios, or in mechanical drying silos.

In the cup you can expect a creamy and malted drink like mouthfeel mixed with caramel and toffee sweetness. There is not too much acidity there, it is clean and controlled. A great coffee that works super, super well in a blend. Delicious espresso.
