Twenty-two smallholder farmers from the Gaitania district, in Colombia’s Tolima province, contributed to this lot. Gaitania lies in the far south of Tolima, in the fertile foothills of Colombia’s highest volcano, Nevado del Huila.
Gaitania has a long and successful history of growing fine coffee - thanks to its fertile soil, plentiful water sources, and temperate climate (with an annual average temperature of 18°). The economy of this remote area relies on coffee production and other forms of agriculture, including farming vegetables, cereals, fruits, and livestock.
Most of the farms in the area are small - the farms that produced this lot averaged four hectares in size (names are below), with three hectares of coffee - and lie at an average altitude of 1,750 metres above sea level. Generally each farm employs around three permanent workers, as well as an extra five or six workers during harvest.
The coffee is picked by hand when ripe. It is immediately de-pulped by the producer using either a traditional hand operated de-pulper or, increasingly often, a de-mucilating machine. It is then washed and dried in the sun on raised beds or, less often, in a mechanical drying silo.
In the cup expect a bright floral tone like sucking on a sunflower, as its mouth-feel is buttery - almost oily - with a delicious brown sugar and cocoa powder finish.
