So why vac-pot? It's not convenient, it's old fashioned, but it produces a very clean cup of coffee that is the choice of many a coffee aficionado. The vacuum principle ensures the coffee is automatically infused at the correct temperature and does not boil. It also means the coffee doesn't become over extracted, unlike some other methods of brewing. If you don't have a vac-pot in your brewing collection here's your chance. I'd always liked the theatrical look that brewing using a spyhon gives so when Steve said he was getting the Hario syphons in stock I decided to treat myself to one.
Using a syphon is a bit of a science, I find it to be very fussy about grind, water temperature, brew time and so on but if you put the effort in you'll end up with a fantastic clean cup, probably the cleanest cup I've had.
It isn't difficult to brew coffee using one of these but it really takes practise to brew excellent coffee.
My only gripe is that the burner doesn't allow you to adjust the flame while it's on so adjusting the amount of heat going into the water isn't possible.
Since getting mine I've switched from using the included cloth filter to using disposable paper filters because I was noticing that even after cleaning the cloth filter according to the instructions the colour of the water was quite tainted as it rose into the top chamber. The paper filters do need qutie a lot of blanching though to get rid of the papery taste.
