The H1 varietal - also called more commonly Centroamericano - is a Catimor which is relatively easy to grow and disease resistant, but can produce very good quality. The quality of this plant at Finca Argentina is among the best we've tasted - it seems to really suit the farm - and often brings a slightly spicy/peppery flavour that isn't found in the other varietals.

A deliciously easy blend of biscuit sweetness and dark chocolate gets a little twist of black pepper on the finish.

Roasting Information
Medium-dark - through first crack, pushing through the gap and looking for the first pops of second. This may roast a little hotter than other El Salvador lots.
