    We originally discovered this coffee somewhere you might not expect us to be finding coffees - Glasgow! We were attending Glasgow Coffee Festival in 2019 and met Diana, who was just beginning to import coffees from her native Colombia into the U.K. Originally from San Roque, near Medellín, Diana has three brothers producing coffee, and it’s an area which has lots of great potential with many small producers.

    We’re always looking for great new coffees, so chats like this are pretty common. In this case, Diana realised she had something really unusual that would be a perfect fit for Hasbean. We’re glad to say that when we tasted it, we agreed.

    The cherries for that first lot came from three different farms: El Descanso, El Tractor, and Villa Sierra, and were all processed at the Renacer micro-washing station in Medellín. The following year we had the opportunity to purchase a single lot just from El Tractor that really impressed us and we're so excited to have been able to support the farm ever since.

    El Tractor is owned by Don Gabriel Cortes and produces mainly Bourbon varietal coffee up at 2,300 metres above sea level on the eastern edge of the city Medellín. This particular lot is a really special one which showcases an experimental 76-hour fermentation process, a relatively quick/'speedy' lactic fermentation allows for the growth of lactic acid bacteria (LAB) under anaerobic conditions.

    Lactic fermentation in coffee processing can mean a lot of different things, but what they all do is create an anaerobic environment for the coffee cherries (meaning keeping them somewhere without much oxygen available). Normal fermentation in coffee cherries involves both yeast and lactic acid bacteria (LAB), but yeast needs oxygen to create new yeast cells, so an anaerobic environment will encourage the LAB more than the yeast. In this speedy lactic process, the coffee cherries are kept warm, speeding up the process. The LAB creates lactic acid from sugars, and the PH level is measured to decide when the fermentation stage is complete. Often, at this point, the coffee would be washed or honey processed, but in this particular case, it’s dried and allowed to go through a natural processing method.

    This coffee has got lots of body and sweetness. A mix of sticky caramel and pineapple – but rather than fresh pineapple, think pineapple upside down cake, where the acidity is dialled back and the sweetness comes to the fore. There’s a little hint of white grape and then lychee on the finish.

        Roasting Information
        Medium - through first crack and let it slow down a little to get even development, but don't over do it or take it too far or you'll lose the processing driven fruit funk.

      Don Gabriel has been a farmer since he was a child in Vegachí, some seventy miles or so North East of Medellin, but unfortunately a little over sixteen years ago, violence in the Vegachí region forced him to leave his life there behind. He had to start a new chapter and chose to do it in the neighbourhood of La Sierra with El Tractor.
