This lot is Orange Bourbon, a natural mutation of Red Bourbon which ripens to a deep orange colour. It's always tricky with a coffee which ripens a different colour to get only the ripe cherries picked. They need to educate the pickers about what a ripe fruit looks like, with the colour change between a little under ripe and perfectly ripe being less in an orange fruit than in a red fruit - to make sure this happens, the farm manager will pick a small group of the best pickers to collect a lot like this.
The coffee is processed as a natural at their mill, San Pedro, a super clean and well organised place. Rafael Jr is in charge of that and he's got a real knack for delicate and balanced processing. It really helps that their mill is the highest one in El Salvador (!) - this means temperatures don't get as hot as in other parts and the fermentation is slow and even.
A big, gloopy coffee - it's like a melted chocolate orange, with juicy sultana on the end. There's a prune note which comes through more as the cup cools and a dark chocolate edge to the aftertaste.

Roasting Information
Medium – keep it light enough to get the complex sweetness, before second gets going, but give it some good development time in the gap too to highlight the fruit and sweet caramelised notes. -
This coffee is sold in 125g bags, not in our regular 250g bags.
If you place an order before 07:30, it will be roasted and dispatched that day. If you order after 07:30, it will carry over to the following working day for roasting.
