All coffee sold in Ethiopia gets graded by the Ethiopian Coffee Exchange (ECX). The visual quality of the green beans – any defects or damage – is assessed, and the coffee is cupped to see how it tastes. Between these factors, a coffee is given a grade from 1 (the best) to 5 (the worst), with grades 1 and 2 being considered Speciality coffee. Ana Sora is Grade 1.
Throughout the cup is blueberry muffin - the flavour of blueberry, but with a cake like sweetness which shifts to brown sugar on the finish. As it cools a hit of bruised plums joins in, supplying a funky kick.

Medium - slow this down a little as it goes through first crack, letting in run into the gap but keeping it before you reach second. This one isn't very forgiving of underdevelopment and can easily roast too quickly, so watch out for that.
