  • The Carbonic Maceration process has been used in the wine industry for several decades. In 2015, Jamison Savage of Finca Deborah was one of the first in the world to start employing CM techniques with coffee. Over the last 3 years he has developed a range of CM approaches and has gained a reputation as an industry leader in these systems.

    Illumination starts with harvesting perfectly ripe Geisha cherries reading 21-24 BRIX. These are then sorted for a second time before processing. After selection the cherries are pulped, leaving a certain percentage of fruit on the seed. They are then tanked for an extended period with constant monitoring and of PH, temperature, and CO2 levels. Ambient temperatures are monitored and controlled to ensure linearity in the processing.

    After the required time inside the CO2 infused tanks, the coffee is removed, then placed on shaded, raised, African beds. Direct sunlight is avoided as the intense UV and heat can cause cracking in parchment. Temperatures, heat, and humidity are controlled expertly inside the dry houses and are carefully maintained. When the coffee has dried to approximately 11%, it is bagged in grain-pro and stored in warehouses for a Reposo period that provides the coffee an opportunity to settle as well as absorb more flavour from its parchment.

    Illumination has won many national championships, placed 2nd in the 2017 World brewers Cup, and 2nd and 4th in the 2019 World Barista Championship.

    Aromas of orange blossom and lime zest at the start, then quickly delivering bright, sweet peach and nectarine flavours that roll into a clean, caramel aftertaste.

  • Slow and steady during the drying phase, once crack starts take a bit of heat out but don’t slow it down too much. Push it through the gap between 1st and second crack reasonable quickly (about 60sec) and drop just before 2nd crack begins.

  • This coffee is sold in 125g bags.
