  • Iridescence is a washed process Panamanian Geisha coffee that's undergone an additional step of being carbonic macerated. The cherries are harvested at peak ripeness by the expert team of Savage Coffee pickers, then pulped and placed in a stainless steel tank. This tank is then charged and pressurised with CO2 to remove oxygen. From here, the coffee is left to ferment at cooler temperatures, with constant monitoring of PH, pressure, and temperature to ensure everything is perfectly controlled at the fermentation stage.

    After undergoing this carbonic maceration, the coffee is then dried for just over 20 hours on a Savage Coffee custom-built tiered raised bed system.

    When the coffee reaches a residual moisture content of 10.5 - 11%, it is placed in hermetically closed bags and stored for several weeks (between 60 and 90 days) at a cool, stable temperature. This resting period helps to even out the moisture content of the coffee beans, and to finalize the aromatic development.

    This coffee was roasted on Wednesday the 28th of February as part of our pre-order.

    There’s a waft of floral notes when hot, swinging into juicy cherry and raspberry jam as it cools into a crisply clean cup.

    Medium-light - slow this down as you come to the end of first crack and let it develop a bit without letting it go too far into the gap.
