These coffees exist in incredibly limited amounts and rarely make it to home brewers, but we want these amazing examples to be enjoyed by those that will really value it. Located at an elevation of 1,900+ meters and nestled deep in the mountains of Volcan, Chiriqui, Finca Deborah is shrouded in dense cloud coverage for most of the year and is home to some of the most special coffee in the world. As beautiful and natural a plantation as they come, rare species of plants and animals are abundant, left undisturbed under the canopy.
Thanks to this extreme elevation and reduced temperature, the metabolism of the trees is slowed. It’s these cold temperatures, reaching 10C, that help to push sugars into the cherries during production and make for an intensely sweet and complex cup profile. It’s an extraordinary environment for growing coffee, and where Geisha, one of the world’s most complicated varieties, thrives.
