This coffee is a naturally processed Biodynamic Geisha from El Equimite which is located in Coatepec in the Veracruz region of Mexico. Veracruz is a traditional coffee-producing centre for Mexico, but the owner of El Equimite, Gibrán Cervantes, has taken an anything-but-traditional approach.

Reimagining what coffee production can be, Gibrán has implemented Biodynamic processes in the farm, which produces not just coffee but a range of other crops. As well as the farm, Gibrán's work extends into supporting other producers in accessing 'speciality quality' buyers and in teaching more about agronomy and biodynamic practices. Please be aware that products grown using biodynamic agricultural techniques may not technically be suitable for vegans. For more information and to generally find out more about Biodynamic agriculture, please have a read of our deeper explanation here.

The variety of this coffee is Pink Bourbon, a variation of the Bourbon coffee variety which rose to fame in Colombia a few years ago. Over the last few years, and particularly recently, it's gained a reputation for its complexity and high cup quality and is now a much more common sight on the specialty coffee scene than it used to be. Visually it’s pretty close to the standard Red Bourbon fruit, but the cherries are lightly variegated between red and yellow, giving a coral-pinkish appearance when ripe (also sometimes called Striped Bourbon). It requires extra skill and attention during harvest to accurately discern the perfectly ripe cherries due to their different natural colouration so we have some skilled pickers at Equimite to thank for being able to identify and separate this unique and delicious tiny lot.

The bright zing and dark sweetness of cherry cola hits you first, before fresh redcurrants and lime zest join into this harmonious balance of process and varietal flavours.
