Episode 721

This is a real easy-drinker, a proper coffee coffee! Coming in up front with a moreish brown sugar sweetness, offset with fresh green apple to keep things balanced. A shoulder of white grape rounds out the cup for a bit of interest on the finish that'll keep you chugging mugs all day long.

Finca La Escondida is close to Lake Apanas near the city of Jinotega in Nicaragua. In Spanish, escondida means ‘hidden’ which is fitting because the farm is hidden from the road by forest.

The first Nicaraguan coffee trees were only planted at La Escondida in 2006, so it’s still a fairly young farm. La Escondida’s layout was planned using plots with different microclimates. In coffee, micro-climates make all the difference to the end cup and influence factors like soil quality, sun exposure and temperature range. This is one of the upsides of planting a new farm – being able to plan ahead!
