This lot is the result of Ensambles (our exporting partner in Mexico) selecting the best tasting coffees that were delivered to their regional warehouse in Huautla, La Cañada.

It represents the work of 18 different producers who on average farm 0.5 hectares of their own land each. The Typica plant stock they grow tends to be very old and grows organically under shade, so the productivity and yields tend to be low.

It's a big mouthful of fruit pastilles! Super sweet with white sugar, there's burst of raspberry, orange and lime popping through in this complex cup.

Medium-dark - Through first crack, let it develop a little in the gap and finish just on the cusp of second, no more.

La Cañada Tejao

Traditionally, despite coffee being the main agricultural product of the region, coffee yields have been low and crops have often been sold to the commodity market, however recent investment in the area from projects like Ensambles sees an increased focus on specialty coffee.
